I know. You’re thinking to yourself… “FROZEN drinks? In winter?! Has she lost her mind?!” But here’s the thing, I L-O-V-E an iced coffee. I drink them year round. And no, it’s not because I live in Southern California. I understand a frozen drink in winter can be a hard sell, especially if you’re braving below zero temps. However, I’m not asking you to drink it outdoors; I’m not that crazy. If you can eat a bowl of ice cream while watching tv at night, you can enjoy a Frozen Irish Coffee this week.

Oh and guess what? It just happens to be National Irish Coffee day on Friday so there’s another excuse to pull out the blender and whip one up!

Any Irish Coffee starts with, well, coffee. For this frozen version I decided on using a cold brew for a slightly sweeter taste to the overall drink. The coffee flavor is also a bit stronger too than regular brewed coffee. But to give it a more fuller coffee taste, I’ve also added in a touch of coffee liqueur. The Irish whiskey gets added in twice here. Once in straight boozy form, and the second with our whiskey-cream-chocolate bomb Kerrygold Irish Cream. The grass-fed milk used in Kerrygold adds a lovely creamy consistency to the drink while the real chocolate gives just a hint of flavor to the final drink.

To round out the drink and give it some additional complexity, I’ve sweetened the coffee with a cinnamon and demerara syrup. A tiny bit of cinnamon gives some sweet and woody notes, while the rich, toasty demerara syrup heightens the coffee flavor (it’s a favorite of mine in coffee drinks).

If you’re already sipping on a hot Irish Coffee this week, then I would highly suggest that you put this recipe in your back pocket until March for that other Irish holiday that this would be totally appropriate for. You could even cover it in green sprinkles (you should definitely do that).

Lastly, you folks may or may not know this already, but in my younger years I used to spin records around Los Angeles (for fun, not as my sole career). So I was thrilled when Kerrygold asked if I could provide some listening soundtracks to the drinks I’ve partnered with them to make. Now, the records (and I mean actual 45s and LPs) that I spun were from my collection of late 1950’s to early 1970’s girl group and garage. These lists will cherrypick a few from there, but I’ll also pick from a wide selection of favorites from all kinds of genres (I also did a classic country stint for about a month too!). Frozen Irish Coffee

Makes 2 drinks
12 ounces cold brew coffee
4 ounces Kerrygold Irish Cream
1 ounce coffee liqueur
2 ounces cinnamon-demerara syrup (recipe follows)
whipped cream and cinnamon, optional

  • The night before, freeze the cold brew coffee in ice cube molds. You also could make the syrup now too.
  • When ready to make the drink, in a drink or high speed blender (if using a regular blender, crack the cubes first so they don’t jam your blades!) combine the frozen coffee cubes, Kerrygold Irish Cream, coffee liqueur, and cinnamon-demerara syrup. Blend until a smooth consistency is reached.
  • Divide the drinks between two glasses. Top with whipped cream and a sprinkle of cinnamon if using.

Cinnamon-Demerara Syrup

1 cup demerara sugar
1 cup water
3 pieces of cinnamon, 2″ in length

In a saucepan, combine the sugar and the water over medium-high heat. Stir to dissolve the sugar crystals and then add in the cinnamon. Bring to a boil. Reduce to a simmer and simmer, uncovered, for 20 minutes. Remove from the heat and let cool to room temperature. Strain into an airtight container and store refrigerated for up to one month.

January is always a slow start to the year for us booze bloggers; there just tends to be a lot of confusion around alcohol. People tend to fall into one of three categories based on what their personal new year resolution might have been: going dry, keep drinking, or cut back and start drinking lower ABV drinks. One year my husband discovered the joy that was Campari and Soda and now that’s become his go-to low ABV cocktail. Some people give up alcohol for a month, and well, they just stop altogether.

I respect all the choices these people make. Err, except maybe those people who give up drinking for January and then proceed to get black-out drunk on February 1st. Why? Why bother at all people?

But anyway, today I’m offering up a classic drink with a low ABV, but not the usual ones you might think of when I say “classic”. Today I’m taking you back in time to those soda pop shops with long counters and shiny chrome straw holders. I’m giving you a recipe for an Egg Cream, but an adult version made with Kerrygold Irish Cream. The traditional egg cream has neither eggs nor cream in it. It is made with milk, chocolate syrup (and for some people that means Fox’s U-Bet chocolate syrup) and seltzer water, and originated in this form in New York in the early 1900’s (possibly late 1800’s).

We’ll be boosting the chocolate with a touch of chocolate syrup, just like the original; your favorite chocolate syrup will do just fine here! I happen to own a soda siphon because… I write about cocktails for a living, but bottled seltzer will work just the same. The magic happens once you add the seltzer to the base of Irish cream and chocolate. Like magic, a creamy head forms on the drink making it look almost like a thick, creamy milkshake. But what I love about this drink is that it is not heavy AT ALL. It is light and frothy and you actually want to drink it down quick because the bubbles do not last all that long.

Kerrygold Chocolate Egg Cream Cocktail // stirandstrain.comThis adult version of the Chocolate Egg Cream clocks in with a proof around 7.5 so it’s definitely a low ABV drink (around 3.75%). So if you’re looking for something that’s a little sweet, a little ABV, and a lot tasty, I think you should give this classic twist a try!

Note: this drink loves a variation! Try one of these combos once you’ve tasted the original recipe below.

  • make it minty with 1/4 teaspoon of mint extract
  • a little nutty with 1/2 teaspoon almond extract
  • sub the chocolate syrup with a different syrup of your choice (vanilla is nice!)

Kerrygold Chocolate Egg Cream

1-1/2 ounces Kerrygold Irish Cream, chilled
1 ounce chocolate syrup, chilled
5-6 ounces of seltzer water, chilled

In a soda glass or highball glass, pour in the chilled Kerrygold Irish Cream and chocolate syrup. Top with seltzer water and stir gently to combine. Enjoy!

If you were to ask me about superstitions, I’d say they’re not something I believe in. Except… I’d kinda be lying. See, the thing is, some years ago I developed this superstition that how I rang in the New Year would somehow dictate how my next year would be. I took this as vague or as specific as I wanted and I find myself thinking about that now as we approach the coming new year.

Fell asleep before the ball dropped? I’m going to have trouble meeting deadlines next year. Spend an amazing time with a guy I’d only just started seeing two months ago? Well, then obviously I was going to marry this guy. (All three are true by the way!)

It’s probably the reason I went to work as a barista instead of a bartender when I first moved out to L.A. It’s part of the reason I heave a big sigh come NYE; I know I’m going to have trouble staying awake. So this year I’m doing a little pre-planning. First, I’m going to push my kids on their grandmother on the 31st and take a long afternoon nap. Next, I’ll be strategically planning my cocktail for the night. It will, of course, have coffee in it. Not just any coffee, I’m infusing some aged rum with a blend of arabica and robusta coffee. Why? Because arabica has a great flavor and robusta brings the CAFFEINE!

Mainly, I wanted something reminiscent of a latte that I could enjoy over the course of the night. I’d save the champagne for the countdown toast of course, before making a swift and silent exit. Now, this pre-planning also includes making this coffee infusion; it takes two days. Alternatively, if you’ve got a coffee liqueur you’d rather sub in and save yourself this DIY project, well, then you do you.

Up All Night Cocktails with Kerrygold Irish Cream // stirandstrain.comIf this were to be my coffee order, I’d say it’s a mocha-vanilla-almond-spiced latte. But, you know, spiked. The Kerrygold Irish Cream brings a silky-rich mouthfeel from the cream and just a touch of chocolate, which is how I prefer my coffee drinks when I go the mocha route. The whiskey in there goes quite well with the aged rum and they impart a subtle spice and vanilla flavor that gets enhanced by the addition of Drambuie and a few drops of vanilla extract.

And because it’s New Year’s Eve and we’re feeling fancy, I broke out the edible gold stars for a sparkling garnish for just a hint of glitz. You definitely need a little glitz on this holiday.

Up All Night Cocktail

1-1/2 ounces coffee infused aged rum, recipe follows (or sub 1-1/4 ounces aged rum with 1/2 ounce coffee liqueur)
1/2 ounce Kerrygold Irish Cream
1/2 ounce orgeat
1/4 ounce Drambuie
3 drops vanilla extract
edible gold stars for garnish

In a shaker filled 2/3 with ice, combine coffee infused aged rum, Kerrygold Irish Cream, orgeat, Drambuie, and vanilla extract. Shake to combine about 20 seconds and strain into a double rocks glass with fresh ice. Optionally garnish with some edible gold stars, for that NYE glitz.

14 oz. aged rum
1/2 cup coffee beans (blend of arabica and robusta), lightly crushed

Combine ingredients in an airtight container (I reused my rum bottle). Swirl to cover the beans. Let sit for 2 days. Fine strain to catch the coffee bean bits (I like using this nut bag for these kind of jobs). Bottle. Use within two years.

Do you have a holiday cookie tradition? I think I may have perfected my gingerbread cookie recipe this year. I mean, I’m using Thomas Keller’s Bouchon recipe as the base, so you really can’t go wrong with that. But, it is the first year that I made a cookie like this that didn’t just separate and spread all over the cookie sheet pan. I’ve yet to find my perfect sugar cookie recipe though. That I can never get right and that always spreads and won’t hold its shape. So, we all have to go without any holiday cookies that are gingerbread; thankfully no one complains. Sorry Santa.

Sure, we see lots of dashes of cinnamon or nutmeg this time of year, but those in combination with an intense ginger flavor…well we’ve got a perfect pair for some whiskey and a hot cocktail. I refer to these heated cocktails during holiday time as winter warm ups. They’re a great companion to a fireplace and a pair of hands in need of warmth.

Gingerbread Winter Warm Up with Kerrygold Irish Cream // stirandstrain.comThis month I’ve teamed up with Kerrygold Irish Cream to make my perfect fireside winter warm up with all the wonderful baking spices found in these gingerbread cookies. It packs a punch of ginger but also has lots of nice spice from the Irish whiskey, and that touch of chocolate and cream in the Kerrygold adds a superb richness to the drink that doesn’t get watered down. And that’s probably because they use real chocolate, and the cream used to make the liqueur comes from grass-fed cows and is a third creamier than what you usually find on the market. You can alter the hot water amount in here to your liking; I keep it around 3 ounces. If you’re feeling really ambitious, you might think about making your own whipped cream and adding some gingerbread syrup to the mix for a super dose of yummy gingerbread-ness (I did. It’s so worth it! Just a tablespoon is all you need to add to your canister.).

Gingerbread Winter Warm Up (makes two drinks)

3 ounces Irish whiskey
1-1/2 ounces Kerrygold Irish Cream
1-1/2 ounces gingerbread syrup, see recipe below
3 dashes Angostura bitters
6-8 ounces hot water (just under boiling)
whipped cream, optional

In a mixing glass, add the Irish whiskey, Kerrygold Irish Cream, gingerbread syrup and bitters. Stir to combine everything and divide between two glasses. Pour in 3-4 ounces of hot water into each glass and stir gently to combine. Optionally top with whipped cream and a dusting of cinnamon.

Gingerbread Syrup

Adapted from Le Pain Quotidien
2 cups water
1-1/2 cups granulated sugar
1 tbsp ground ginger (or 3 slices, 1/4″ thick fresh ginger with skin on)
1/2 tsp vanilla extract
2 tsp ground cinnamon
1/2 tsp ground allspice

Put all ingredients in a medium saucepan over high heat and bring to a boil. Lower temperature and keep at a simmer for 20 minutes. Remove from heat, strain fresh ginger out if using, and let cool to room temperature. Once cool, place in an air-tight container. Refrigerate up to one month.

We’ve been posting some decadent cocktails and boozy treats over on our Instagram these last few months and now we’re rounding them up here on the site so you all don’t have to go searching all over the place to find them. We did two cocktails: a S’Mores Campfire Cocktail and a frozen blended Cookies and Cream cocktail. And also created a boozy Cold Brew and Chocolate Whoopie Pie situation that we’re still craving.

Kerrygold Campfire S’Mores Cocktail

What happens when you combine chocolate-y Kerrygold Irish Cream, amaro, beer, a slight mist of smokey Islay Scotch and a blow torch?! One amazing dessert beer cocktail! You don’t need to an actual campfire to enjoy these S’Mores Campfire cocktails.

Kerrygold Campfire Cocktail

2 oz Kerrygold Irish Cream
.5 oz amaro
2-3 oz Smoked Porter beer
Mist of a Smoky Islay Scotch
Marshmallow
Dash cinnamon

In a mixing glass, combine Kerry Gold Irish Cream and amaro over ice. Stir to chill 20 seconds. Pour in beer and stir gently to combine. Strain over fresh ice into a double rocks glass or large stem glass. Mist scotch over the top of the cocktail. To garnish, spear a marshmallow on a cocktail pick, set over the glass, ignite with a kitchen torch or long match, and sprinkle cinnamon on top (watch for sparks!). Blow the flame out and enjoy!

Cold Brew Coffee and Kerrygold Buttercream Whoopie Pies

Growing up, any rich, chocolate cake that sandwiched a generous helping of frosting was a favorite of mine. Candy I could take or leave, but cake sandwiches… OH YES PLEASE. Now I get to make an adult version with Kerrygold Irish Cream laced buttercream and for extra pep: cold brew coffee cake. Whoopie Pies should not just be for kids, which is why I make my grown up versions ginormous; then you can catch a little bit of nostalgia with every bite.

Kerrygold Irish Cream & Cold Brew Whoopie Pies

Cakes (makes 5 cakes):
1/2 lb. butter
1 cup light brown sugar, packed
1 egg
1 teaspoon baking powder
1/2 teaspoon baking soda
3/4 teaspoon salt
1 teaspoon vanilla extract
1/2 cup cocoa, dutch-processed
10 ounces all purpose flour
1/2 cup cold brew coffee
1/2 cup milk

Filling (this filling can be doubled if you want extra filling):
1/2 stick butter, softened
1/2 pound powdered sugar
2-1/2 tablespoons Kerrygold Irish Cream

To make:
Prepare the frosting by creaming together the butter and powdered sugar until smooth. Pour in the Kerrygold Irish Cream until incorporated. Filling can be kept refrigerated in a sealed container up to four days.

Next, preheat oven to 350 degrees. Make the cakes by creaming the sugar and butter together until smooth. Add in the egg and mix until incorporated. Next add in baking powder, baking soda, salt and vanilla extract. Mix until well combined. Sift in cocoa powder and mix until combined. Mix in 1/2 of flour and the cold brew, and then mix in second half of flour and the milk. Stir until just combined. Scoop out a 1/4 cup of mixture onto a sheet pan covered in parchment. You can fit 5 scoops on each sheet pan. Bake 16-18 minutes until a toothpick comes out clean from the center. Cool on sheet pan and then transfer to a wire rack to finish cooling completely. Store in an air tight container until ready to use.

To assemble, spread filling on flat side of one half of the cakes. Top with second half of cake. Eat. Enjoy!

Cookies and Cream Frozen Blended Cocktails

Dessert Cocktails with Kerry Gold Irish Cream // stirandstrain.com

Sweet vanilla ice cream and crunchy chocolate cookies combine into one decadent frozen blended cocktail.

Kerrygold Cookies and Cream Frozen Cocktails (makes 2 drinks)

2 oz Kerrygold Irish Cream
3 oz vanilla vodka
3/4 cup vanilla ice cream
1 cup crushed ice
1/2 cup crushed chocolate wafer cookies

In a blender, pour in Kerrygold Irish Cream, vanilla vodka and vanilla ice cream. Blend until smooth. Add in ice. Blend until ice is incorporated and smooth. Divide half the mixture into two double rocks glasses. Scoop a heaped tablespoon of cookie crumbs into the glass and spread in an even layer. Top each glass with the rest of the liquid mixture. Garnish with remaining cookie crumbs.

For a little over 3-1/2 years now I’ve been freelancing full time and while I love the multitude of perks that come with that (slippers! showers at 10am! Punch R&D before noon!) around holiday time I miss one of the best perks about working in an office: the vendor gift baskets.

They start sometime around Thanksgiving. You can always tell which vendor made a whoops that year by the size of the gift basket. Oh hey guys, let’s forget about trying to install that wrong range in the restaurant, instead, look at all this CANDY AND BOOZE we’ve sent you!!!!

Chocolate Raspberry Bon Bon Cocktail with Kerrygold Irish Cream // stirandstrain.comThere was the ubiquitous popcorn balls (bleck), the really cheap wine (Ok, we can try that come 3pm on Friday) and my favorite, the bon bon boxes. You know the ones: giant, golf ball sized chocolates filled and flavored with all kinds of fruits and nuts. The chocolate raspberry? Oh yeah, that’s mine thanks.

This week we’ve teamed up with Kerrygold Irish Cream Liqueur to recreate a drinkable version of that indulgent treat. Kerrygold Irish Cream is made in Ireland with milk from grass-fed cows so it is SO rich and SO creamy, and the chocolate is real, not just flavoring, which you definitely want if you’re making a cocktail like this. With a hint of oaky Irish Whiskey it’s rich treat on it’s own but also fantastic for mixing in a cocktail. This drink is super simple to whip up and I’m giving you guys the option to either make your own raspberry syrup, or buy it, because sometimes… you just can’t.

Chocolate Raspberry Bon Bon Cocktail with Kerrygold Irish Cream // stirandstrain.comChocolate Raspberry Bon Bon Cocktail

1-1/2 oz Kerrygold Irish Cream Liqueur
1 oz vodka
1/4 oz Allspice dram
3/4 oz Raspberry syrup (recipe below or use store bought, we recommend Monin)
3 raspberries and Cinnamon for garnish

In a mixing glass 2/3 filled with ice, combine Kerrygold Irish Cream, vodka, allspice dram, and raspberry syrup. Stir 20 seconds to chill and strain over fresh ice in a rocks glass. Garnish with raspberries and a dusting of cinnamon for garnish.

Raspberry Syrup

3/4 cup sugar
3/4 cup water
1 pint raspberries

In a medium saucepan over medium-high heat, combine sugar and water. Stir to dissolve and add raspberries. Reduce heat to low and simmer 10 minutes, remove from heat and let sit 30 minutes. Strain into an airtight container. Store in refrigerator up to 2 weeks.
